Step 1:

Step 2:

Cook for 10 to 15 minutes, breaking up the chicken while cooking until the liquid has completely evaporated and the chicken is thoroughly cooked but has retained some moisture.

Step 3:

Stir for 30 to 60 seconds after adding the garam masala and fresh chillies. Add the cilantro after turning the heat off. Stir thoroughly, then set aside until it is safe to handle.

Step 4:

Get ready to assemble the samosas in the interim: Wax paper or plastic wrap can be used to line a sheet pan. Using the ready-made samosa pattis you get packets with 25 or 50 pieces. The triangle should be folded so that its right outer border is parallel to the sheet’s bottom horizontal edge.

Step 6:

A triangle-shaped compartment with two flaps protruding to the left should now be present. Open the pocket up and hold it upright like a cone. Two teaspoons of the filling should be added to the cone. Over the final pastry strip, apply a thin layer of the flour paste using the back of a tiny spoon. To close the samosa, fold it over the filled triangle.

Step 7:

Fill any gaps in the samosa’s corners with the flour paste and crimp the edges shut. Repeat with the remaining filling and rectangles (you might have extra wrappers), then arrange them on the prepared sheet pan with enough space between them. They can be immediately fried or baked, or they can be frozen until solid on the pan and then wrapped in an airtight container or freezer bag. They can be frozen for up to two months before frying and are dropped directly from the freezer into the hot oil.

Step 8:

Fill a frying pan with oil to a depth of 1/2 inch before frying the samosas. When the oil starts to ripple, the heat is too high. Add as many samosas as will fit without touching one another, then shallow-fry for 1 to 3 minutes per side, or until golden brown (longer, if frying directly from the freezer). To keep them from becoming soggy, transfer to a cooling rack or plate lined with paper towels. Refill and reheat the oil between batches as you repeat the process with the remaining samosas.

Turn the oven on to 400 degrees and bake the samosas. Foil a sheet pan that is 1 inch deep and apply a thin (1/4 inch) layer of oil to the pan. Samosas should be coated with oil in the sheet pan and arranged in rows in a single layer. Bake for 6 to 8 minutes per side, flipping once halfway through until both sides are uniformly golden brown. To keep them from becoming soggy, transfer them to a cooling rack or plate lined with paper towels.
