  • 1 Packet Zorabian Pre-Cut Chicken Skinless (900 grams)
  • 3 large Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 2 tablespoons Ginger-garlic paste
  • 4-5 Green chilies, slit
  • 2 tablespoons Red chili powder
  • 1 teaspoon Turmeric powder
  • 2 tablespoons Coriander powder
  • 1 tablespoon Cumin powder
  • 1 teaspoon Garam masala
  • 4 tablespoons Oil
  • Salt to taste
  • Fresh coriander leaves for garnish

To Make Varhadi Spice Powder or Paste

  • 6-8 Dried red chilies,
  • 2 tablespoons Coriander seeds,
  • 1 tablespoon Cumin seeds,
  • 1 tablespoon Fennel seeds,
  • 1 teaspoon Black peppercorns,
  • 4-5 Cloves,
  • 1 inch Cinnamon stick,
  • 1 cup Grated coconut,
  • Bay leaf,
  • Stone flower,
  • 2 tablespoons Oil

Cooking Instructions

  1. Prepare the Varhadi Spice Powder: Dry roast the dried red chilies, coriander seeds, cumin seeds, bay leaf, fennel seeds, stone flower, black peppercorns, cloves, and cinnamon stick. Add grated coconut to the roasted spices and roast until golden brown. Grind into a powder or fine paste with a little water.
  2. Cook the Chicken: Heat 4 tablespoons of oil in a large pan over medium heat. Add finely chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and green chilies, and cook for a few minutes.
  4. Add the chopped tomatoes and cook until they become soft and oil separates from the mixture.
  5. Add the chicken pieces and mix well to coat with the spice mixture.
  6. Add the prepared spice paste, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Cook until the spices are well blended.
  7. Cook the chicken for about 10 minutes, stirring occasionally.
  8. Add enough water to cover the chicken, bring to a boil, then reduce heat and let it simmer until the chicken is cooked through and tender.
  9. Add garam masala and cook for another 2-3 minutes.
