  • 6 black peppercorns
  • 1 tsp salt

For the soup:

  • 2 medium carrots, sliced into rounds
  • 2 sticks celery, sliced
  • 1 cup broccoli florets
  • 1 cup baby spinach or kale
  • 1 medium zucchini, sliced (optional)
  • 1 tbsp apple cider vinegar
  • 1 tsp freshly grated ginger
  • Salt and black pepper to taste

For finishing:

  • Juice of 1 large lemon
  • Fresh coriander or parsley leaves, chopped
  • Extra black pepper to taste

Steps

  1. Place the chicken soup pieces in a large pot and cover with 1.5 litres of cold water. Bring to a boil over high heat. As the water heats up, skim off any grey foam that rises to the surface continuously for the first 8 to 10 minutes. This is essential for a clean, clear broth.
