Our first chicken salad recipe is called LEMON HERB CHICKEN SALAD

Let’s start with Ingredients:

For Marinade Dressing:

  • 2 Tablespoons Olive Oil.
  • Juice of 1 Lemon (1/4 Cup Fresh Squeezed Lemon Juice).
  • 2 Tablespoons Water.
  • 2 Tablespoons Red Wine Vinegar.
  • 2 Tablespoons Fresh Chopped Parsley.
  • 2 Teaspoons Dried Basil.
  • 2 Teaspoons Garlic Chopped finely.
  • 1 Teaspoon Oregano.
  • 1 Teaspoon Salt and Pepper to taste.
  • 1 Packet Zorabian Chicken Breast Boneless (500g).

For Salad we would require:

  • 4 Lettuce Leaves Washed and Dried.
  • 1 Cucumber Diced Properly.
  • 2 Mini Tomatoes Diced Properly.
  • 1 Red Onion Sliced to Perfection.
  • 1 Avocado Sliced.
  • 1/3 Cup of Black Olives.
  • Sliced (As Per Your Preference).
  • Lemon Sliced into Two for Presentation Purposes.

INSTRUCTIONS:

  • Add together all of the marinade/dressing ingredients in a large bowl. For dressing remove some remaining marinade in Refrigerator.
  • Add the Zorabian chicken breast boneless to the marinade in the bowl; marinade chicken for 15-30 minutes (or up to two hours in the refrigerator if time allows). While waiting for the chicken, prepare all of the salad ingredients and mix them in a large salad bowl.
  • Once the chicken is ready, heat 1 tablespoon of oil in a grill pan or a grill plate over medium-high heat. Grill chicken on both sides until browned and completely cooked through.
  • Allow chicken to rest for 5 minutes; slice and arrange over salad. Drizzle salad with the remaining UNTOUCHED dressing. Serve with lemon wedges.
  • As an addition to the recipe, you can also crumble some cheese and enjoy the Chicken Salad Recipe.

Another classic Chicken Salad Recipe is GRILLED CHICKEN SALAD WITH PESTO SAUCE.

INGREDIENTS:

For Dressing:

  • 1/3 Cup Olive Oil.
  • 2 Tablespoons Basil Pesto.
  • 2 Tablespoons Lemon Juice (As Per Your Preference).
  • 1-2 Tablespoons Water.
  • 2 Teaspoons Garlic Properly Minced.
  • 1 Teaspoon Salt And Pepper Powder As Per To Taste.
  • 1 Packet Zorabian Chicken Breast Boneless (500g).

For Salad:

  • 4 Lettuce Leaves Washed And Dried.
  • 1 Large Cucumber (Finely Chopped).
  • 1 Cup Cherry Tomatoes Diced And Ready.
  • 1/2 Onion – Sliced.
  • 1 Avocado – Sliced.
  • 1/2 Cup Crumbled Feta.
  • Lemon Slices For Presentation.
  • 2 Tablespoons Extra Pesto Sauce While Serving (if required).
  • 2 Tablespoons Fresh Chopped Basil Or Parsley to Garnish.
