  • 2 cloves garlic finely minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the bowl:

  • 3 to 4 cups fresh kale leaves stems removed and roughly torn
  • 1 tsp olive oil for massaging
  • A pinch of salt for massaging
  • 1 medium sweet potato peeled and cut into cubes
  • 1 tbsp olive oil for roasting
  • Salt and black pepper for roasting
  • 1/2 avocado sliced
  • 1 cup cherry tomatoes halved
  • 2 tbsp roasted pumpkin seeds or sunflower seeds

For the lemon tahini dressing:

  • 3 tbsp tahini
  • Juice of 1 lemon
  • 1 clove garlic finely grated
  • 3 to 4 tbsp warm water to thin
  • 1/2 tsp honey
  • Salt to taste

Steps

  1. Preheat the oven to 200 degrees Celsius. Toss the sweet potato cubes with olive oil, salt and black pepper. Spread on a baking tray in a single layer and roast for 20 to 25 minutes until golden and tender, turning halfway through.
  2. Make the dressing. Whisk together the tahini, lemon juice, garlic and honey in a small bowl. Add warm water one tablespoon at a time until the dressing reaches a smooth pourable consistency. Season with salt and set aside.
  3. Massage the kale. Place the torn kale leaves in a large bowl. Drizzle with one teaspoon of olive oil and add a pinch of salt. Use your hands to firmly knead and scrunch the kale for 2 to 3 minutes until it turns glossy, reduces in volume and feels noticeably softer and more tender. Set aside.

  6. Assemble the bowls. Divide the massaged kale between two bowls as the base. Arrange the roasted sweet potato, cherry tomatoes, sliced avocado and sliced chicken on top. Scatter the roasted seeds over everything.
  7. Drizzle the lemon tahini dressing generously over the bowl and serve immediately.

Tips for Best Results

Always massage the kale before using it raw. This is the single most important step in the recipe. Unmassaged kale is tough, fibrous and bitter. Massaged kale is tender, glossy and mild. Two to three minutes of firm kneading with a little olive oil and salt is all it takes to transform the ingredient completely.
