- 250g Chicken Mince

- 2 tbsp vegetable oil
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 to 2 green chillies, finely chopped
For the spices
- 1/2 tsp ground turmeric
- 1 tsp red chilli powder (adjust to taste)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp garam masala
- 1 tsp salt (or to taste)
For cooking and garnish
- 2 cups water or chicken stock
- 1/4 cup fresh coriander leaves, chopped
- 1/2 lemon, juiced (optional)
Steps
- Heat 2 tablespoons of vegetable oil in a large pan or kadai over medium heat. Add the finely chopped onions and sauté for 5 to 6 minutes until they turn golden brown and soft.
- Add the minced garlic, grated ginger and chopped green chillies to the pan. Sauté for 1 minute until fragrant.
- Add the finely chopped tomatoes and cook for 4 to 5 minutes over medium heat, stirring occasionally, until the tomatoes soften and break down completely. The mixture should look thick and paste-like.
- Add the turmeric, red chilli powder, ground cumin, ground coriander, garam masala and salt. Stir well and cook for 1 minute to let the spices bloom and release their aromas.
- Add the chicken mince to the pan. Break it up with a wooden spoon and mix it well with the spiced onion and tomato mixture. Cook over medium-high heat for 6 to 8 minutes, stirring frequently, until the chicken is fully cooked and no longer pink. The chicken should be crumbly and well coated with the masala.
- Pour in 2 cups of water or chicken stock and bring the mixture to a boil. Reduce the heat to medium-low.
- Add the rolled oats to the pan and stir well to combine. Let the mixture simmer for 5 to 7 minutes, stirring occasionally, until the oats soften and absorb the liquid. The oats should have a porridge-like consistency but not be too thick or dry. If it looks too thick, add a splash of water.
