- 1 tsp garam masala

- ¼–½ cup water (as needed)
Steps
- Boil the quartered onions, ginger, and garlic in water for 8–10 minutes until soft. Drain, cool, and grind into a smooth paste.
- Mix the chicken with hung curd, onion paste, all dry spices, and salt. Marinate in the fridge for at least 1 hour (overnight for deeper flavour).
- Bring the marinated chicken to room temperature. Place it in a heavy-bottomed non-stick pan on medium heat.
- Stir gently for 2–3 minutes. The chicken will release its own juices and yogurt will prevent sticking.
- Add a splash of water (¼ cup), cover, and simmer on low for 20–25 minutes until the chicken is fully cooked and the gravy thickens naturally.
- Garnish with fresh coriander. Serve hot with steamed rice or whole wheat roti.

Steps
- Mix hung curd with ginger-garlic paste, all spices, and salt to make a thick marinade.
- Coat the chicken pieces evenly and marinate in the fridge for 2–4 hours (or overnight for best results).
- Preheat air fryer to 180°C.
- Arrange marinated chicken in the basket (single layer, no oil needed).
- Air fry at 180°C for 18–22 minutes, flipping halfway for even cooking.

Steps
- In a heavy-bottomed pot, add sliced onion, ginger-garlic paste, tomatoes, green chillies, turmeric, chilli powder, garam masala, whole spices, and salt.
- Add chicken pieces and mix well. Cover and cook on medium heat for 10 minutes – the chicken releases juices that form the base.
- Add soaked rice and 4 cups water. Stir once, cover, and cook on low flame for 15–18 minutes until rice is fluffy and chicken is tender.
- Garnish with coriander and mint. Let it rest 5 minutes before serving.
