Kashmiri Chicken Curry Recipe

Ingredients Required for Kashmiri Chicken Curry Recipe:

  • Pre-Cut Chicken Skinless – 1 Packet (500 grams)
  • Onions (finely chopped) – 2 large
  • Tomatoes (finely chopped) – 2 medium
  • Ginger-garlic paste – 2 tablespoons
  • Yogurt – 1/2 cup
  • Red chili powder – 1 teaspoon (adjust to taste)
  • Kashmiri red chili powder – 1 teaspoon (for color)
  • Turmeric powder – 1/2 teaspoon
  • Coriander powder – 1 teaspoon
  • Cumin powder – 1/2 teaspoon
  • Garam masala – 1 teaspoon
  • Fennel seeds – 1/2 teaspoon
  • Cloves – 4-5
  • Green cardamom – 2
  • Cinnamon stick – 1-inch
  • Bay leaves – 2
  • Salt – to taste
  • Cooking oil – 3 tablespoons
  • Fresh coriander leaves (for garnish)

Cooking Instructions for Kashmiri Chicken Curry:

  1. Marinate the chicken in a mixing bowl, with yogurt, red chili powder, and turmeric powder.
  2. Add Kashmiri red chili powder, coriander powder, cumin powder, half of the ginger-garlic paste, and a pinch of salt.
  3. Mix well to coat the chicken evenly with the spices. Cover and marinate for at least 30 minutes.
  4. Heat the cooking oil in a kadhai over medium heat.
  5. Add fennel seeds, cloves, green cardamom, cinnamon stick, and bay leaves. Sauté for a minute.
  6. Add the chopped onions to the pan. Sauté until the onions turn translucent and become brown.
  7. Add the remaining ginger-garlic paste and cook for another couple of minutes.
  8. Add the finely chopped tomatoes and cook until they soften and the oil starts to separate.
  9. Add the marinated chicken and cook on medium-high heat for about 5-7 minutes.
  10. Stir occasionally, until the chicken becomes brown and tender.
  11. Reduce the heat to low and add a cup of water to the pan and mix well.
  12. Cover and simmer for about 15-20 minutes.
  13. Stir occasionally until the chicken is thoroughly cooked.
  14. Add garam masala over the chicken and give it a mix.
  15. Serve hot with steamed rice, roti, or naan.
