- 2 tablespoons ginger-garlic paste
- 1 tablespoon red chilli powder
- 1 teaspoon turmeric powder
- 2 teaspoons biryani masala
- Salt to taste
- 1/4 cup cooking oil or ghee
- 2 bay leaves
- Green cardamom pods & cloves – 4 each
- 1 cinnamon stick
- 1 teaspoon saffron
- 2 drops kewra water
- 1 tablespoon rose water
- ¼ cup of milk
- Chopped coriander & mint leaves – 1/2 cup each
Chicken biryani is among the famous Mughlai foods. Prepare a saffron concoction by adding them to the milk and keep it aside. Take a large pot and heat the oil or ghee. Add bay leaves, green cardamom, cloves, and cinnamon, and saute for about a minute. Then add the sliced onions and ginger-garlic paste, and saute them for about two minutes. Take another large pot and add a layer of rice to it, then add a layer of chicken, and repeat until you add it all. Add the soaked saffron, kewra water, rose water, and ghee on top of the layers. Sprinkle the chopped coriander leaves and mint leaves over them. Cover the pot and seal the edges so that the steam does not escape the pot. Cook on low heat for 15-20 minutes until you get the aroma. Garnish the biryani with fried onions and serve hot with salad and raita. Remember to use farm-fresh chicken for an authentic chicken biryani taste.
