We are excited to share with you a recipe that embodies the adventurous spirit of Rajasthan’s cuisine – Rajasthani Junglee Maas. This traditional dish, known as the “Wild Meat Curry,” takes inspiration from the rich hunting heritage of the region. In this recipe, we will use skinless chicken as a substitute for red meat, while still capturing the essence of the dish’s bold flavours. So, let’s embark on a culinary journey and learn how to make this tantalizing Rajasthani delicacy.

Ingredients you need to make Rajasthani Junglee Maas are

  • Zorabian Pre-Cut Chicken Skinless – 1 Packet (900 gms)
  • Garlic and Ginger Paste – 2 tbsp
  • Red Chillies are Boiled and then Made Into A Paste – of 8 or 10 chillies
  • Salt as per taste
  • Curd – 100 grams
  • Onions – 2 big chopped
  • Cumin and coriander powder – 1 tablespoon each
  • Ghee and Refined Oil – 1 Cup

Instruction to make it

You must heat some ghee and refined oil, preferably in an eastern ware. After that, you can add the onions and ginger garlic paste. After it is cooked and you see that the raw smell dies off, add the masala, like the cumin and the coriander. Beat some curd with salt, then add the same to the oil. Make sure that you continuously stir the curd to avoid it from splitting. It is the correct time to add the chilli paste as well, along with the meat.

When you see that the meat is tender, you can finish it with a bit of ghee. If you are running out of time, the ideal way would be to boil the meat in advance to reduce the cooking time.
