Chicken Baida Roti has that BAMBAIYA touch

A well-known street snack from Mumbai with a characteristic “Bambaiya” name. Baida roti is an egg-based paratha package, and Baida signifies egg. For this food, people use Refined flour to form the paratha dough, which is then filled with a mixture of chopped chicken, egg, and other spices. They then fold it into a bundle, fry it quickly on a Tava (griddle), and serve it with a squeeze of lime.

So basically, Baida roti is an egg-stuffed Indian bread that people shallow fry to make it a little larger in size than a paratha. Though the origin of Baida roti is unsure some people say Mughlai while some say Burmese, Mumbaikars love this straightforward dish and find it the ideal snack for late-night eating after a party! As it has a complex flavor and texture, Chicken baida roti is actually fairly easy to cook. Baida roti is soft, moist, and flavorful on the inside, with a crispy outside that resembles puff pastry.

But how and when did this intriguing cuisine come into existence?

There is a tonne of intriguing anecdotes regarding Mughlai Paratha. The Mughlai paratha is thought to have been invented by Jahangir’s cook, Adil Hafiz Usman, during his rule (1569–1627) over the Mughal Empire. However, the monarch demanded that his cook create a new dish within 10 days since he was sick of always receiving the same paratha and beef for dinner. So, Usman arrived on the ninth day carrying zabir fall, also known as anda roti or Mughlai paratha. Therefore, Jahangir gave his cook 1001 gold coins and a jagir in West Bengal since he was so happy. Consider paying 1001 gold coins in the 16th century for a basic paratha!

Chicken Baida roti works as a snack or lunch dish

This flaky wrap called a “Baida Roti” (baida means egg) is stuffed with meat, eggs, and seasonings. You can deep-fry it and offer it as a lunch dish or as a mid-afternoon snack. Also, another variation of the Mughlai Paratha is the Baida Roti, commonly referred to as “Burma Rotis.” However, these rotis are also called “Palatas” in Burma (modern-day Myanmar), where they are incredibly popular. You can trace the origin of Burma rotis in India to the British era when Sri Lanka and Burma were both governed by the British. Migrants from Burma brought the cuisine to Indian coasts during that era. The Arabic or Lebanese bread, which is square-shaped and deep-fried bread or wraps loaded with meat, and the Mughlai paratha share many similarities, both from India’s Awadhi region. They often roll the roti in a beaten egg and shallow fry it after stuffing it to the brim with minced meat.
